An exotic salad full of nutrition and flavor. Featuring butternut squash, red onion, baby spinach, and more. Topped with our creamy Tachbisha™ Dressing.
Roasted Butternut Squash Salad
1 medium butternut squash, peeled and cubed
1 (5 oz) box of baby spinach and arugula mix
1 red onion, thinly sliced
1 box of grape tomatoes, cut in half
1 bottle Tachbisha® Garlic and Coconut, Rich and Creamy, Dressing and Marinade
1 (6 oz) package of crumbled feta cheese
1/2 jar (3 oz) kalamata pitted olives, drained
1 tbsp za'atar
Preheat the oven to 385.
Combine butternut squash and 1/2 bottle of the Tachbisha® Dressing.
Roast the butternut squash in the preheated oven and bake for 20-30 minutes, until butternut squash is cooked through, flipping once halfway through.
In a salad bowl, combine the spinach and arugula mix, grape tomatoes, feta cheese, sliced red onions, pitted olives and baked butternut squash.
Drizzle salad with the rest of dressing and sprinkle with za'atar.
