Apricot Chicken with a Hint of Ginger
4 chicken thighs with skin and bone
1 cup Tachbisha® All-Purpose Marinade
1 tbsp fresh ginger
1 cup apricot preserves
Cilantro for garnish
Preheat the oven to 375°.
Heat a cast iron skillet on medium-high heat.
Place the chicken in the cast iron skillet, skin side down, and brown all sides of the chicken for 3-5 minutes each.
In a separate bowl, add the rest of the ingredients and whisk them together.
Pour the mixture over the chicken. Put the pan in the oven and cook uncovered for 30 minutes.
Garnish with cilantro.
